Week One: It’s Pie Time

In our first week of class, we’ll tackle the often-intimidating homemade pie crust. Once you learn to make them from scratch, you’ll never use a store-bought crust again! After we’ve mastered the all-butter pie crust, we’ll work on advanced lamination, lattice and crimping techniques with a little help from the Pie Queen herself, Erin McDowell. Together, we’ll master the homemade crust and end the class with a gorgeous, freshly baked apple pie.

Week Two: On a Roll

September 26 | 10 am to 1 pm CDT

Our second week of class focuses on enriched dough, doughs that come together with fats, sugar and dairy. We’ll learn to craft the perfect dinner rolls, and while the dough rises, we’ll make our very own butter with optional add-ins. Don’t worry, Joy will hold your hand (digitally) through the scary parts. You’ll need a stand mixer for this one! 

Week Three: Puff Puff Pass

In our third week of class, we’ll try our hand at a savory and sweet take on profiteroles, perhaps better known as cream puffs. Joy will answer all your burning choux pastry questions, walking you through each step. We won’t let you fail! We’ll learn how to turn these little puffs into a savory passed app or a maple glazed eclair, depending on your mood. 

Week Four: Piece of Cake

October 10 | 10 am to 1 pm CDT

It’s our last week of class, and we’re getting cozy with cake! You’ll join in with your layers already baked, and Joy will tell us her tips and tricks to stacking and frosting our layers like the pros. The super talented Karlee Flores, better known as Olive and Artisan on the internet, will join us to teach how to make picture-perfect frosted buttercream roses. We’ll learn advanced piping techniques and other ways to spruce up your creation if you’ve made enemies with your piping bag. By the end, we’ll all have a tasty and beautifully decorated cake to enjoy!
